Farro Salad

My mom makes the most incredible Farro salad. Farro is a wheat grain similar to barley or wheatberries, but I would liken it more to quinoa for its ability to take on flavor well. This particular recipe is very loose — it calls for “fresh herbs, such as parsley, chives, basil, and tarragon” and “feta or goat cheese”. I laughed when I first saw this… these herbs and cheeses have such different tastes, but I promise, no matter which you use, your salad will come out delicious.

Your Good House magazine’s Farro Salad

My mom’s version has basil, parsley, and tarragon (when we have it) and feta cheese. I will admit that she did all of the work this time, unless reading the directions counts as helping out. Nevertheless, this is one of my favorite side dishes and a great alternative to a green salad.
