Shortbread is one of my go-to cookie recipes. It has very few ingredients (most of which I usually have on hand) and it’s an all-around favorite. Who doesn’t love butter and sugar? This time, I took Barefoot Contessa’s Pecan Shortbread recipe and added a twist by dipping them in white chocolate. I love them plain or dipped, but since these cookies were a gift, I wanted to jazz them up a bit. It was a good thing I was giving them away, or else I would have 100% eaten the entire batch of cookies!
