Baked Apples

Baked Apples (serves 4)

  • 4 large Granny Smith apples
  • 3/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1 tsp cinnamon
  • 2 oz raisins or currents
  • 1/4 chopped pecans or walnuts
  • 4 tbsp unsalted butter
  • 1 tbsp lemon juice

Preheat oven to 425° F.

Core the apples. The easiest way is the use an apple corer, but you can also use a knife, cutting around the core, and a spoon to scoop everything out. Squeeze lemon juice over the cored apples to keep them from browning.

Cut cold butter into small pieces. Mix together (with your hands) the brown sugar, rolled oats, cinnamon, raisins, nuts, and butter. Stuff the mixture into the apples.

Bake apples for 15-20 minutes in a glass baking dish. The apples should look darker all the way around, and you may hear the mixture bubbling. The apples are best served immediately (and with ice cream!), but you can also refrigerate them for a couple days.
