Mini Meringue Swirls

4 egg whites
pinch of salt
1 cup of sugar
1 tsp vinegar
1/2 heaped tsp vanilla extract

Beat egg whites for a couple of minutes on high, then add the sugar very slowly.

Once combined, add vinegar and vanilla and beat until stiff and shiny.

Line cookie sheet with parchment paper or tin foil (dull side up). Form the meringue into your desired shape (disc, mini swirls, etc.).

Bake at 300°F for about 1 hour and 10 minutes. (They should be crispy, but if they aren’t cooked through, leave them in the oven a bit longer.) Turn off oven and leave in overnight.
